Chocolate Banana Muffin Bites

These Chocolate Banana Muffin Bites are moist, soft and packed full of delicious fresh banana flavour with a subtle hint of chocolate. This recipe uses only 100g sugar and I made 38 of these!! I also used cocoa powder instead of chocolate as cocoa powder contains less than 55 calories, plus 0.1g of sugar, whereas a 100g Bar of chocolate has 482 calories, and almost 50g sugar! Big difference.

Not forgetting that bananas are amazing for you. Everyone knows that, which makes this a bit more nutritious! Look, I know these aren’t exactly the most healthiest things.. but they are so much more healthier than some of my recipes.. oops!

Makes approx 38 muffin bites.

Ingredients:

  • 3 ripe bananas
  • 125ml vegetable oil
  • 2 large eggs
  • 50g dark brown sugar
  • 50g caster sugar
  • 125g plain flour
  • 100g self raising flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking soda

Method:
Pre-heat the oven to 180c

  1. Mash the bananas in a bowl, either with a masher or an electric mixer.
  2. Add in the oil.
  3. Mix in the eggs until thoroughly combined.
  4. Add both sugars and mix.
  5. Next, mix in the dry ingredients (flours, cocoa, and soda) until well combined.
  6. Spoon 1 tablespoon of mixture into each case and bake for 8 minutes.

38 is so many, so half the mixture if you want!
